Apple Cinnamon Muffins

3/4 cup Milk
1/4 cup Vegetable Oil
1 Lg. Egg
2 cups All-Purpose Flour
1/2 cup Sugar
2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Cinnamon
1 cup Chopped Peeled Apples

Heat oven to 400 degrees. Grease bottoms of muffin cups. Make Streusel Topping and set aside. (Recipe Below) Beat milk, oil and egg in lg. bowl with fork of wire whisk. Stir in flour, cinnamon, sugar, baking powder and salt all at once just until flour is moistened ( batter will be lumpy). Beat in apples with the milk.

I make a double batch and only put half the milk in and the other 3/4 cup I put with my apples.

Streusel Topping

1/4 cup Flour
1/4 cup Brown Sugar
1/4 tsp Ground Cinnamon
2 tbsp Firm butter

Mix flour, brown sugar and cinnamon in medium bowl. Cut butter, suing pastry blender or crisscrossing 2 knives, until crumbly.
